RUSSIAN CHERRY SAUCE (KIZIL SAUCE)

8 ounces cherries
1 teaspoon sugar
1 1/2 cups Kitchen Basics Chicken Stock
4 teaspoons flour
2 ounces seedless raisins
2 teaspoons butter
1 pinch salt

Notes: Steam and stone the cherries.  Cook gently in water until soft, strain off the juice and put aside.  Rub the cherries through a sieve, put back into the juice, together with raisins, sugar, salt and 1 cup Kitchen Basics Chicken Stock.  Blend the butter with flour, dilute with a little more stock and add to the cherry sauce.  Mix well, bring to boil and simmer for 10 minutes, stirring frequently.  Serve with chicken, turkey or game.
