1 1/2 cups Kitchen Basics Chicken Stock
2/3 cup couscous
2 teaspoons olive oil
1/4 cup leeks sliced
2 cloves garlic crushed
2/3 cup plum tomatoes seeded and diced
1/2 cup green peas
1/4 cup raisins
1/4 teaspoon ground cumin
1/4 cup fresh basil chopped
1/4 cup lemon juice
1/2 teaspoon pepper

Bring Kitchen Basics Chicken Stock to a boil in a medium saucepan; stir in couscous. Remove from heat; cover and let stand 5 minutes. Set aside.

Heat oil in a medium nonstick skillet over medium-high heat. Add the leeks and garlic; saute 1 minute. Add hot couscous, tomato, green peas, raisins and ground cumin; cook 2 minutes or until thoroughly heated. Remove from heat; stir in basil (or cilantro), lemon juice and pepper. Yield: 4 servings (serving size: 3/4 cup).
 
Serving Ideas: Serve warm.
