Wild Mushroom Soup

Ingredients
Serves 6
32 oz. Kitchen Basics Chicken Stock
8 oz. Kitchen Basics Beef Stock
1/2 cup red wine (optional)
1 oz. dried shiitake (or other) mushrooms
1 onion diced
3 leeks, rinsed, drained & diced
4 Tbsp. margarine or butter
3 Tbsp. flour (*or cornstarch)
1 lb. fresh button mushrooms without stems
Garnish: Sour cream

Directions
In a sauce pan, bring stock, wine and shiitake mushrooms to a boil; let stand and cool. In a large pot, sauté onions & leeks in margarine over low heat for 10 minutes; add flour and cook another 5 minutes. Add other ingredients (except sour cream). Simmer until mushrooms are tender,
approximately 30 minutes. Purée in blender.
