Mushroom Rice Pilaf

Ingredients 2 Tbsp unsalted butter
2 Tbsp olive oil
12 ounces sliced mushrooms
1/2 cup chopped shallots
1/2 cup orzo pasta
1 cup long grain white rice
2 cups Kitchen Basics Veal Stock
1 sprig fresh thyme
1/2 cup toasted almonds, optional
Directions Heat butter and olive oil in heavy pan and sauté mushrooms & shallots until softened. Add orzo and rice and saute a few minutes until grains are coated. Add veal stock and thyme sprig.
Bring to a boil; reduce heat, cover and cook until all liquid is absorbed, about 20 minutes. Discard thyme, sprinkle with optional almonds and season to taste with salt & pepper.
